Mama Katie's Shrimp Dressing

1lb shrimp, chopped
1 stick of butter, salted
1/4 cup chopped yellow onion
1 bulb (entire bulb (green and white) of the scallion)
1 rib of celery (1 rib off the celery stalk)
1 (12 ounce box stove top cornbread dressing)
2 cups of chicken broth
2 eggs
Preheat oven 350 degrees
Chop your onions, celery and scallion and mix it together. Heat and melt a 1/2 stick of butter in a saucepan. Once melted, add your chopped seasoning (onion, scallion, celery mixture) and while stirring cook for 2-3 minutes.
Now, add your chopped shrimp and cook until shrimp light pink.
In a second pot, start preparing your Stove Top dressing BUT USE chicken stock instead of water when directed on the box instructions.
Let your dressing sit for 5 minutes and then fluff your dressing with a fork (instructions on box) and then add the shrimp mixture. Mix it all together well.
Lightly beat 2 eggs in a separate bowl.
Add the egg mixture to the dressing and mix well again.
Add another 1/3 cup of chicken broth now and stir.
Butter or Pam to oil the pan (larger 9X13 pan is a thin layer of dressing and will cook faster. A smaller pan will take a little longer to bake).
Let dressing bake 20-30 minutes or until firm and golden brown on top.
